Okra also known as lady’s fingers in western comes from a large vegetable plant thought to be of African origin. It is usually available fresh year-round in the South or you can use frozen, pickled or canned one.


  • 450 g okra
  • ½ cup tapioca flour
  • 1/3 cup all purpose flour
  • 1 teaspoon baking powder
  • ½ cup water
  • 2 tablespoons fish sauce
  • ¼ piece lime
  • 1 piece onion
  • 3-4 pieces Thai chili pepper


Step 1

Take a large bowl and mix all flour, baking powder and water and stir well. Drop each piece of okra in it.

Step 2

Slice chili pepper and onions. Add fish sauce and squeezed lime juice to make chili fish sauce.

Step 3

Take a frying pan, pour a cup of oil and preheat.

Step 4

Remove each piece of okra from flour mixture, coat with butter and drop in the frying pan. Fry until they turn light brown.

Remove as soon as they are ready and serve immediately hot with chili fish sauce and rice.
