This is a northeastern food served as an appetizer, but most commonly it is a main dish with other dishes. You can make some modifications of it, with adding some dried shrimp, tamarind paste, galangal and kafir lime leaves; anyway it will be excellent.

  • 300 g pork (ground)
  • ½ onion (thinly sliced)
  • 1 tablespoon toasted rice
  • 2 limes
  • ¼ tablespoon chili pepper (ground, dried)
  • 1 green onion (sliced)
  • 3 tablespoons fish sauce
  • 3 sprigs spearmint
  • 5 sprigs cilantro (sliced)

Step 1

Put ground pork in a medium sized bowl and squeeze ½ lime on it. Mix well and set aside for half an hour to marinate.

Step 2

Preheat sauce pan on a high heat and put marinated pork on it with adding several spoons of water not to fry meat much. Keep stirring until the pork is well done.

Step 3

Take a large sized bowl and put cooked pork in it. Add fish sauce, green onion, onion, cilantro, the rest of the lime juice, ground chili pepper and ¾ of toasted rice into the bowl.

Put the mixed ingredients in a serving bowl, garnish with spearmint and sprinkle the rest of toasted rice on top. Serve with vegetables like cabbage, green beans, lettuce and Thai basil.
