This Thai-style baked chicken with fluffy rice and seasonings will become one of your top favorite dishes as soon as you give it a try and prepare! With a lovely taste it makes a filling and satisfying yummy dinner for the whole family.
- 1 tablespoon vegetable oil
- 1 onion (chopped)
- 400 g chicken fillets
- 4 tablespoons Thai green curry paste
- 250 g Basmati and wild rice mix (rinsed)
- 2 red peppers (deseeded, cut into wedges)
- 1 lime
- 400 g coconut milk (reduced-fat)
Preheat the oven to 200C/fan. Then heat the oil in a casserole dish and cook onions for 5 minutes until softened.
Add the chicken and curry paste and cook for 3 minutes more, stirring.
Add the rice and peppers, then stir in the lime zest and juice, coconut milk and 250g boiling water.
Bring to a simmer, cover with lid and bake for 20 minutes until the rice is fluffy. Sprinkle over the coriander before serving.
