Stir Fried Loofah

Stir Fried Loofah

There are two physically different kinds of Loofah. One has ridges on it that must be peeled to remove the sharp ridges before cooking. The second type, which is more common in the US, is round and when small looks like a zucchini. It only needs to be washed and sliced for cooking, though some recipes will call for it to be peeled. Use whichever you like.


  • 1 egg
  • 1 loofah
  • 3-4 garlic cloves (chopped)
  • 1-2 teaspoons fish sauce
  • 2 tablespoons cooking oil


Step 1

Tip the loofah and cut at an angle.

Step 2

Preheat a medium sized fry pan and add oil to heat. As soon as it’s ready add the chopped garlic and loofah in. Stir to coat the loofah with oil. Stir well until loofah is ready, light green from outside.

Step 3

As soon as the loofah is ready, add fish sauce. Crack and drop the egg in; scramble the egg in the pan right away.

As soon as egg is ready, remove the dish from the oven and serve while hot with rice.
