You will never find vegetables so loved. Actually you can use this with almost all vegetable stir fry. Try it with asparagus, mushrooms, Chinese broccoli or cauliflower.
- 20-25 stems of water spinach
- 1 teaspoon bean paste (salted)
- 5 red Thai chili (smashed)
- 1 tablespoon oyster sauce
- 2 tablespoons garlic cloves (smashed)
- 3 tablespoons vegetable oil
- 1 tablespoon water
Take a medium-sized pan or wok and make it very hot on a high heat. Put the garlic in it and stir quickly until it is turned to light brown.
Add water spinach with chilies and stir very quickly. Make sure that they are evenly cooked and then add the water, bean sauce and oyster sauce and stir for 2-3 more minutes. Remove from the oven as soon as leaves are dark green and the stem is medium green. Be careful not to overcook or you will spoil all taste.
Serve while warm with some rice.
