Interesting and unusual Thai dessert made with sweet potatoes and ginger.
- 400 g sweet potatoes (peeled and cut into large pieces)
- 4 cups water
- 5 slices ginger (peeled)
- 220 g palm sugar
Place the sweet potatoes cut in large pieces in the water and leave soak for 30 minutes.
Remove the sweet potatoes, heat the water to a boil and add the potatoes again.
Add the ginger and cook the potatoes until they are tender. Add the sugar and dissolve.
To serve, place the potatoes in individual bowls and spoon over the ginger syrup.
