Without any cooking you can make Thai carrot slaw in a few minutes and serve it as a side or light main dish. The fresh vegetables with flavorful spices and herbs make a yummy light meal.


  • 4 carrots (grated)
  • 1 red pepper (deseeded, finely sliced)
  • 1 red onion (finely sliced)
  • 100 g bean sprouts
  • 1 red chili (finely chopped)
  • 3 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 2 teaspoons caster sugar
  • coriander (roughly chopped)


Step 1

Mix the carrots, red pepper and red onion in a bowl with the bean sprouts.

Step 2

Combine chili, fish sauce, lime juice and sugar.

Step 3

Pour the dressing over the slaw and stir in the coriander before serving.
