Using a few simple ingredients you can make this flavorful Thai coconut chicken broth fast and easily. Coconut milk and some flavors give it a special deliciousness!
- 1-2 tablespoons Thai red curry paste
- 400 ml coconut milk (half fat)
- 2 chicken breasts (skinless, cut into strips)
- 100 g green beans
- 100 g cherry tomatoes
- 100 g brown rice (steamed)
Fry the curry paste in a splash of the coconut milk, stirring continuously until fragrant. Add the rest of the milk and bring to boil.
Add the chicken and beans and simmer for 5 minutes.
Add the tomatoes and simmer for another 3 minutes. Serve with brown rice.
