This is one of the classics from Thai cuisine. You can see it actually in every Thai restaurant and if you like it, surprisingly is very simple to make. You can change it with your taste; use fish or shrimp instead of chicken or even make vegetarian with veg stock, tofu for chicken, and soy sauce for fish sauce.

  • 30-40 g chicken
  • 1/4 cup coconut milk
  • 1 galangal
  • 1-2 kaffir lime leaves
  • 1 lime
  • 2-3 Thai chili pepper
  • 2-4 cilantro
  • 1 tablespoon fish sauce

Step 1

Take a galangal and slice it and put into a sauce pan with coconut milk and water. Leave the pan to boil lower to medium heat to boil. Do not forget to stir frequently as coconut milk will curdle.

Step 2

Add sliced chicken and fish sauce. Add some kaffir lime leaves with removed central stem from the leaves. Give the soup to boil again and turn off the heat.

Step 3

Add crushed fresh Thai chili pepper and squeezed 1/3 of a lime in each serving. Pour the soup in them and add cilantro for garnish. Serve while hot.
