This fresh, healthy cucumber salad takes a few minutes to prepare and is perfect as a side salad or light weeknight meal. It gives you the feeling of freshness and tastes truly Thai!
- 1 cucumber (cut into ribbons)
- 1 gem lettuce (shredded)
- 140 g bean sprouts
- coriander (roughly chopped)
- mint (roughly chopped)
- 1 teaspoon wine vinegar
- 1 tablespoon fish sauce
- 1/2 teaspoon light muscovado sugar
- 2 red chili (finely chopped)
Mix wine vinegar, fish sauce, sugar and chili together until the sugar is dissolved.
Put the salad ingredients in a bowl, then pour over the dressing, mixing well to combine. Serve immediately.
