Fast, easy and possible to cook in 20 minutes! This fried rice dish with prawns and peas, and a lot of seasoning makes a delicious unforgettable dinner with your friends who will be craving for more and more of this.
- 2 tablespoons vegetable oil
- 1 red onion (halved, sliced)
- 1 red chili (sliced)
- 2 garlic cloves (sliced)
- 250 g prawns (raw, peeled)
- 300 g brown rice (140 g uncooked, 160 g cooked)
- 75 g frozen peas
- 1 tablespoon dark soy sauce
- 1 tablespoon fish sauce
- 4 large eggs
Preheat 1 tbsp oil in a wok. Cook the onion, garlic and chili for 2-3 minutes until golden.
Tip in the prawns and cook for another minute.
Add the rice and peas, keep stirring until very hot.
Stir in the soy and fish sauce and then add the chopped coriander. Keep warm.
Heat the remaining oil and fry eggs with some seasoning.
Divide the fried rice mix and top each with a fried egg. Serve with sprinkled coriander and chili sauce if desired.
