This recipe for Thai satay stir-fry is very easy to follow and make a delicious meal. This is a very quick and delicious dinner suggestion for vegetarians also.
- 3 tablespoons peanut butter
- 3 tablespoons sweet chili sauce
- 2 tablespoons soy sauce
- 300 g straight-to-wok noodles
- 1 tablespoon oil
- 1 small knob of ginger (peeled, grated)
- 300 g vegetable (stir-fry)
- basil leaves
- 250 g roasted peanuts (roughly chopped)
Make a smooth satay sauce out of mixing peanut butter, chili sauce, 100ml water and soy sauce.
Cook the noodles following the instructions on the pack, then drain.
Preheat the oil in a wok and stir-fry the ginger and harder pieces of vegetables for 2 minutes.
Add noodles and the rest of the vegetables and fry over a high heat for 2 minutes, stirring continuously until all is cooked.
Push the whole thing on the side and pour the peanut sauce on the pan. Bring to the boil and then mix with the stir-fry.
Scatter with the basil leaves and peanuts to serve.
